Southeast Asian Style Salad with Sweet Chili and Lime Dressing and Pork Belly

This salad is made with rice noodles vermicelli, fresh mint leaves, fresh cilantro, red onion, carrot, cucumber, romaine lettuce and peanuts.  The dressing is sweet chili sauce, lime juice and fish sauce.  You could top this with any kind of meat, or tofu.  I braised pork belly in soy, ginger, and garlic and then seared it until crispy.
